Our friends at M&P Engineering have a newsletter with fun onion-related tips and recently included this simple and quick recipe to onion-up your Thanksgiving table.
Ingredients:
- 2 tbs. butter or margarine
- 3 large sweet onions or 4 medium white or yellow onions
- 2 cups shredded cheese (8 oz.)
- 1 can cream of chicken soup
- 2/3 cups milk
- 1 tsp. soy sauce
- 1 baguette, sliced
Recipe:
Slice the onions. Melt the butter in a pan over medium heat and add the onions. Cook until clear. In a shallow casserole pan, layer the onions, 2/3 cheese and salt and pepper to taste.
In a saucepan, heat the soup, milk, and soy sauce. Add this mixture over the onions and stir gently to mix.
Top with the bread slices and cook at 350 for about 15 minutes. After 15 minutes, push the bread slices under the sauce and top with the remaining cheese. Cook for another 15 minutes until the cheese is melted.
